Paige's Apple Crumble Pie

Ingredients:

  • 1 unbaked pie pastry shell
  • 5-6 medium apples, peeled, cored and sliced 1/4" thick*
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cornstarch or 2 tablespoons flour
    For the topping:
  • 1/2 cup whole oats
  • 1/4 cup all purpose or white whole wheat flour
  • 1/4 cup + 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon
  • 1 stick cold butter
    *Choose firm kinds like granny smith, fuji or honey crisp. You can use a mixture.

Instructions:

  1. Preheat oven to 450F.
  2. Line a 9" deep dish pie pan with the pastry shell.
  3. In a medium mixing bowl, mix together the oats, flour, and brown sugar. Using a pastry cutter or your fingers, cut or rub in the butter until the mixture resembles coarse bread crumbs.
  4. Place the crumble mixture in the fridge until ready to use.
  5. In a large bowl, mix together the apples, sugar, cinnamon, nutmeg, and lemon juice. Lay the apples in the pie crust and sprinkle over the cornstarch or flour.
  6. Remove the crumble from the fridge and sprinkle it over the apples.
  7. Place the pie on a cookie sheet, and bake at 450F for 15 minutes.
  8. Reduce oven temperature to 350F and bake for an additional 30-40 minutes, or until the top is brown. If the pie crust edge gets too brown before the pie is baked, cover the edges with pie crust protector or strips of tinfoil.
